UT’s Ready for the World Café will continue its tour of France on Tuesday, April 1, and Thursday, April 3.
The luncheons are held at 11:30 a.m. on Tuesdays and Thursdays through May 1 in the UT Visitors Center.
The café is a full-service international dining experience. Lunch consists of intermezzo or small appetizer, salad, entrée, and dessert.
Cost is $12 and the faculty-staff discount does not apply. Advance tickets are required. For tickets, see Marcia Johnson in 110 Jessie Harris Building, call 865-974-6645, or e-mail rhtm@utk.edu. Cash, checks, and credit cards are accepted.
The Tuesday, April 1, menu is as follows:
First course: Tartiflette (dish made with potatoes, cheese, lardons, and onions)
Second course: Chicken fricassee with tarragon (classic French stew of chicken and vegtables)
Third course: P’tit Basque and Port Salut cheeses
Dessert: White chocolate mousse
The Thursday, April 3, menu is as follows:
First course: Sauteed mussels in white wine
Second course: Pork au poivre (pepper-crusted pork chops with a cream sauce) served with duchess potatoes and braised broccoli rabe
Third course: Saint Andre and fol epi cheeses
Dessert: French apple tart
Bread: Brioche
The dates and themes for the remaining luncheons are as follows:
- April 17 – Japan (sushi)
- April 22 – Thailand
- April 24 – Spain I
- April 29 – Spain II
- May 1 – France and Japan fusion
The luncheons are produced through a collaboration of HRT 445 (the Advanced Food Production and Service Management class), the UT Culinary Institute, and the Pellissippi Culinary Institute.
